Task & responsibilities Strategy & Operations Management Determine sushi product mix (e.g., sashimi, hand rolls, combo sets), manage stock levels, and set standards for ingredient freshness to ensure efficient inventory control and consistent product and service quality. Develop daily/weekly procurement plans and manage supplier relationships (e.g., seafood, produce vendors) to meet cost and quality targets. Prepare and manage operational budgets, monitor expenditures (e.g., ingredients, labour costs), and ensure each site meets financial performance targets. Maintain comprehensive financial records (sales, costs, profits) and stock ledgers; submit regular performance reports. Set product pricing strategies and promotional policies (e.g., lunch specials, seasonal menus) based on market dynamics and cost structures. Marketing & Customer Service Plan and execute in-store promotions (e.g., social media campaigns, community partnerships) to enhance brand visibility. Coordinate marketing initiatives (e.g., new product launches) for effective store-level implementation. Serve customers during peak hours, provide product advice (e.g., ingredient sourcing, serving suggestions), and resolve complaints to boost satisfaction. Ensure high customer service standards are maintained across all staff interactions. Team Management Oversee end-to-end recruitment, training, and performance management of sushi chefs and front-of-house staff. Prepare and manage weekly staff rosters in accordance with operational demands and labour cost targets. Supervise staff daily, deliver on-the-job training (e.g., food preparation standards, customer service), and conduct regular performance reviews. Foster a positive team culture and implement staff incentives to support productivity and retention. Compliance & Standards Ensure compliance with South Australian Food Act 2001, Work Health & Safety (WHS), and hygiene regulations. Oversee cleaning routines, food storage procedures, and equipment maintenance to maintain safe and hygienic operations. Qualification & experience AQF Diploma or higher in Hospitality/Business Management OR 3+ years’ industry experience in a sushi/fast-food setting. Proficiency in budgeting, financial analysis, and inventory control across multiple sites. Experience in developing marketing strategies, negotiating with suppliers, and managing diverse teams. Experience in recruiting, training, and leading teams of 10+ staff (kitchen + front-of-house) across locations. Thorough understanding of food safety standards, WHS requirements, and SA hospitality regulations.
